Caramel Sauce

  •  1 cup light brown sugar
  • 6 tablespoons unsalted butter
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (163°C) and line an 8×8-inch baking pan with parchment paper.
  2. Melt the butter in a saucepan over low heat. Stir in the granulated sugar, brown sugar, cocoa powder, salt, instant coffee, and baking powder until smooth.
  3. Remove from the heat and let the mixture cool for about 5 minutes.
  4. Whisk in the eggs one at a time, then stir in the vanilla extract.
  5. Fold in the flour until just combined, then gently mix in the chocolate chips and chopped pecans.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 28–35 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
  8. Meanwhile, prepare the caramel by combining the brown sugar and butter in a saucepan over medium heat. Stir until melted, then slowly whisk in the heavy cream. Cook for 3–5 minutes until slightly thickened. Remove from the heat and stir in the vanilla.
  9. Let the brownies cool for about 15 minutes, then drizzle generously with the warm caramel sauce.
  10. Sprinkle with additional chocolate chips and chopped pecans.
