Turkey Melt with Cheddar, Spinach, and Bacon

  • Author: Emmy Carter
  • Total Time: 18 minutes
  • Yield: 2 sandwiches 1x

Description

This Turkey Melt with Cheddar, Spinach, and Bacon combines deli turkey, melted white cheddar, crispy bacon, fresh spinach, tomato, and honey mustard between golden, buttery slices of sourdough bread.

Ingredients

Scale
  • 4 slices sourdough or thick, crusty bread of choice
  • 2 tablespoons honey mustard
  • 2 slices white cheddar cheese
  • 4 slices deli turkey
  • Thin tomato slices from 1 medium red tomato
  • ½ cup fresh baby spinach
  • 4 strips cooked bacon
  • 2 tablespoons butter, softened

Instructions

  1. Lay the four bread slices on a clean work surface and spread the honey mustard evenly over one side of each slice.
  2. On two slices of bread, layer the white cheddar, deli turkey, thin tomato slices, fresh baby spinach, and two cooked bacon strips per sandwich.
  3. Place the remaining bread slices on top with the honey mustard side facing inward.
  4. Spread the softened butter evenly over the outside of each sandwich.
  5. Heat a skillet over medium heat.
  6. Place the sandwiches in the skillet, buttered side down. Cook until the underside is golden brown and crisp and the cheddar is beginning to soften.
  7. Carefully flip each sandwich with a wide spatula.
  8. Continue cooking until the second side is golden and crisp and the cheddar is fully melted. If the bread browns too quickly, reduce the heat slightly and continue cooking until the cheese is melted and the turkey is warmed through.
  9. Transfer the sandwiches to a cutting board and let them rest briefly before cutting in half and serving.

Notes

  • Use sturdy sourdough or thick, crusty bread so the sandwich holds the moist tomato and other fillings.
  • Pat particularly juicy tomato slices dry before assembling to help keep the bread crisp.
  • Cook over moderate heat so the bread browns without burning before the cheddar has time to melt.
