Description

This easy Taco Pasta combines seasoned ground beef, tender medium shells, red bell pepper, tomato paste, and melted cheddar cheese in one hearty skillet meal.

Ingredients

Scale
  • 1 lb. ButcherBox Ground Beef
  • 1/2 cup onion, chopped finely
  • ½ tablespoon minced garlic (2 cloves)
  • 2 cups red bell pepper, diced
  • 2 tablespoons taco seasoning, low sodium
  • 3 cups medium shells pasta (10 oz)
  • 1 tablespoon tomato paste
  • 2 cups beef broth
  • 2 cups water
  • 1 cup shredded cheddar cheese

Instructions

  1. Place a large deep skillet or Dutch oven over medium heat. Add the ground beef and cook, breaking it apart with a wooden spoon or spatula, until browned and cooked through.
  2. Add the finely chopped onion, minced garlic, and diced red bell pepper. Stir into the beef and cook until the vegetables begin to soften and the onion and garlic are fragrant.
  3. Add the low-sodium taco seasoning and stir until it coats the beef and vegetables. Add the tomato paste and mix thoroughly.
  4. Add the medium shells pasta, beef broth, and water. Stir well to distribute the pasta throughout the liquid.
  5. Bring the mixture to a simmer and cook, stirring as needed, until the pasta is tender and the cooking liquid has developed into a flavorful sauce.
  6. Add the shredded cheddar cheese and stir until completely melted and evenly incorporated into the hot pasta.
  7. Serve the taco pasta hot.

Notes

  • Use the specified low-sodium taco seasoning to help keep the overall salt level balanced with the beef broth and cheddar.
  • Stir the pasta periodically while it cooks to help the shells cook evenly and prevent them from sticking.
  • Leftovers can be refrigerated in an airtight container and gently reheated. The pasta may thicken as it sits because the shells continue absorbing moisture.
