  • Yield: 8 servings 1x

Description

This Sweet Potato Casserole with Marshmallows features creamy brown sugar-spiced sweet potatoes topped with buttery pecans and a layer of golden mini marshmallows for a comforting holiday side dish.

Ingredients

Scale

For the sweet potato filling

  • 4 large sweet potatoes, peeled and chopped into large chunks
  • ½ cup unsalted butter
  • 1 cup brown sugar
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon nutmeg

For the pecan topping

  • 4 tablespoons unsalted butter, melted
  • ⅓ cup brown sugar
  • 2 tablespoons all-purpose flour
  • ½ teaspoon salt
  • 1¼ cups finely chopped pecan pieces

For the marshmallow layer

  •  10 oz mini marshmallows

Instructions

  1. Place the peeled and chopped sweet potatoes in a large pot and cook until they are tender and easy to mash.
  2. Drain the sweet potatoes thoroughly, then transfer them to a large bowl and mash until smooth or nearly smooth.
  3. Add the ½ cup unsalted butter, 1 cup brown sugar, ½ teaspoon salt, ½ teaspoon cinnamon, 1 teaspoon vanilla extract, and ¼ teaspoon nutmeg. Mix thoroughly until the butter is incorporated and the seasonings are evenly distributed.
  4. In a separate bowl, combine the 4 tablespoons melted unsalted butter, ⅓ cup brown sugar, 2 tablespoons all-purpose flour, ½ teaspoon salt, and 1¼ cups finely chopped pecans. Stir until evenly combined and crumbly.
  5. Spread the sweet potato mixture evenly into a suitable casserole dish.
  6. Sprinkle the prepared pecan mixture evenly over the sweet potato layer.
  7. Arrange the 10 oz mini marshmallows evenly over the pecan topping.
  8. Bake the casserole in a preheated oven until heated through and the marshmallows are soft and lightly golden on top. Watch closely during the final minutes to prevent excessive browning.
  9. Let the casserole rest briefly before serving.

Notes

  • Drain the cooked sweet potatoes well before mashing to prevent a watery filling.
  • For the smoothest texture, mash the sweet potatoes while they are still warm.
  • Watch the marshmallows closely near the end of baking because they can brown quickly.
