Stuffed Salmon With Spinach & Feta

  • Author: Emmy Carter
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

Tender salmon fillets stuffed with a savory mixture of wilted baby spinach, tangy feta, Parmesan, and roasted red peppers, seasoned with Italian seasoning, paprika, and a pinch of cayenne.

Ingredients

Scale
  • 4 × 6-ounce pieces of salmon (approximately 170 grams each; longer pieces work best)
  • 2 Tbsp olive oil, divided
  • 3 cups baby spinach, packed
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika, regular or smoked
  • A pinch of cayenne pepper
  • Approximately 5.3 ounces feta cheese (approximately 150 grams)
  • 1/4 cup Parmesan, freshly grated
  • 1/4 cup jarred roasted red peppers, chopped into small 1/4-inch pieces
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil as directed and add the packed baby spinach. Cook until the spinach has wilted substantially.
  2. Season the wilted spinach with Italian seasoning, paprika, and a pinch of cayenne pepper.
  3. Add the feta cheese, freshly grated Parmesan, and finely chopped roasted red peppers. Stir until the filling is evenly combined.
  4. Taste the filling and season with salt and pepper as needed, keeping in mind that the feta and Parmesan already contain salt.
  5. Place the salmon pieces on a clean cutting board. Carefully cut into the side of each piece to create a pocket, taking care not to cut completely through the salmon.
  6. Divide the spinach and feta filling evenly between the salmon portions, gently spooning it into each pocket without overfilling.
  7. Heat the remaining olive oil as directed for cooking the salmon.
  8. Carefully cook the stuffed salmon until the fish is cooked through, the exterior is lightly browned, and the filling is hot.
  9. Handle the salmon gently when moving or turning it so the filling remains inside the pockets.
  10. Remove the cooked salmon from the heat and allow it to rest briefly before serving.

Notes

  • Longer salmon portions are easier to stuff because they provide more room to create a pocket for the filling.
  • Both regular and smoked paprika work in this recipe. Smoked paprika adds a subtle smoky flavor.
  • Taste the filling before adding salt because feta and Parmesan are naturally salty.
