Strawberry Shortcake

  • Author: Emmy Carter
  • Total Time: 45 minutes
  • Yield: 8 servings 1x

Description

This classic Strawberry Shortcake combines tender homemade shortcake with fresh strawberry topping and lightly sweetened vanilla whipped cream for a simple, fruit-filled dessert.

Ingredients

Scale

For the strawberries

  • 1 batch Fresh Strawberry Topping

For the shortcake

  • 3 cups all purpose flour, spooned and leveled
  • 1/3 cup granulated sugar
  • 1 teaspoon kosher salt
  • 2 tablespoons baking powder
  • 3/4 cup butter, COLD (1 & 1/2 sticks)
  • 1 large egg, cold
  • 3/4 cup buttermilk, COLD
  • 1–2 tablespoons buttermilk, cold OR ice water

For the whipped cream

  •  2 cups heavy cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Prepare 1 batch of Fresh Strawberry Topping according to its recipe and set aside until ready to assemble.
  2. Add the flour, granulated sugar, kosher salt, and baking powder to a large mixing bowl. Mix to combine.
  3. Add the cold butter and work it into the dry ingredients, keeping the butter cold and leaving small pieces distributed throughout the mixture.
  4. Add the cold egg and 3/4 cup cold buttermilk. Mix until the ingredients begin to form a dough.
  5. If additional moisture is needed, gradually add 1–2 tablespoons of cold buttermilk or ice water until the dough comes together.
  6. Prepare and bake the shortcake according to the recipe method. Avoid overworking the dough. Allow the baked shortcake to cool enough to handle.
  7. Add the heavy cream, powdered sugar, and vanilla to a mixing bowl. Whip until fluffy and structured, taking care not to over-whip.
  8. Assemble the shortcake with the strawberry topping and whipped cream. Serve shortly after assembling for the best texture.

Notes

  • Keep the butter, egg, and buttermilk cold for the shortcake.
  • Add the extra 1–2 tablespoons of buttermilk or ice water gradually, only as needed to bring the dough together.
  • For the best texture, store the shortcake, strawberry topping, and whipped cream separately and assemble shortly before serving.
