Ingredients
Scale
- 12 ounces pasta penne, farfalle, or your choice
- 2 tbsp Olive oil
- 1 pound Salmon fillets skin removed
- Salt and pepper to taste
- 2 cloves Garlic minced
- 1 cup Heavy cream
- 1 cup Chicken broth
- 1 cup freshly grated Parmesan cheese
- 2 cups Fresh spinach
- 1 tsp Lemon zest
- 1 tbsp Lemon juice
Instructions
- Bring a large pot of water to a boil and cook the 12 ounces of pasta according to the package directions. Drain thoroughly and set aside.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Season the 1 pound of skinless salmon fillets with salt and pepper. Cook until the salmon is cooked through and flakes easily. Remove from the skillet and break into bite-sized pieces.
- Add the 2 cloves of minced garlic to the same skillet and cook briefly until fragrant. Pour in 1 cup of heavy cream and 1 cup of chicken broth, stirring to combine. Allow the mixture to heat through.
- Gradually stir in 1 cup of freshly grated Parmesan cheese. Continue stirring as the cheese melts into the cream and broth mixture until the sauce is creamy and smooth.
- Add 2 cups of fresh spinach and stir gently until the spinach wilts. Add 1 teaspoon of lemon zest and 1 tablespoon of lemon juice, then stir to combine.
- Return the cooked pasta to the skillet and toss gently with the creamy spinach sauce. Add the salmon pieces and carefully fold them through the pasta. Mix until everything is evenly distributed. Taste and adjust the seasoning with additional salt and pepper if needed. Serve warm.
Notes
- Penne, farfalle, or another preferred pasta shape can be used.
- Freshly grated Parmesan helps create a smooth, creamy sauce.
- Cook the salmon until it is cooked through and flakes easily, as cooking time can vary with the thickness of the fillets.
