- 3/4 cup graham cracker crumbs
- 3 tablespoons unsalted butter, melted
- 8 ounces reduced-fat cream cheese or Neufchâtel cheese, softened
- 3/4 cup plain 0% Greek yogurt
- 2 large egg whites
- 1/3 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon vanilla extract
- 1–2 teaspoons coconut extract
- 1/3 cup sliced almonds
- 1/3 cup shredded or flaked unsweetened coconut
Instructions
- Preheat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
- Mix the graham cracker crumbs with melted butter until evenly moistened. Press firmly into the bottom of the pan.
- Bake the crust for 8–10 minutes, then remove and let cool slightly.
- Beat the softened cream cheese until smooth.
- Add Greek yogurt, egg whites, sugar, flour, vanilla extract, and coconut extract. Mix until smooth and combined.
- Fold in the shredded coconut and sliced almonds, reserving a little for the topping if desired.
- Pour the filling over the crust and smooth the top.
- Sprinkle with the remaining coconut and almonds.
- Bake for 25–30 minutes, until the center is set with a slight jiggle.
- Cool completely, then refrigerate for at least 2–3 hours before slicing.
