  • 3/4 cup graham cracker crumbs
  • 3 tablespoons unsalted butter, melted
  • 8 ounces reduced-fat cream cheese or Neufchâtel cheese, softened
  • 3/4 cup plain 0% Greek yogurt
  • 2 large egg whites
  • 1/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 12 teaspoons coconut extract
  • 1/3 cup sliced almonds
  • 1/3 cup shredded or flaked unsweetened coconut

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
  2. Mix the graham cracker crumbs with melted butter until evenly moistened. Press firmly into the bottom of the pan.
  3. Bake the crust for 8–10 minutes, then remove and let cool slightly.
  4. Beat the softened cream cheese until smooth.
  5. Add Greek yogurt, egg whites, sugar, flour, vanilla extract, and coconut extract. Mix until smooth and combined.
  6. Fold in the shredded coconut and sliced almonds, reserving a little for the topping if desired.
  7. Pour the filling over the crust and smooth the top.
  8. Sprinkle with the remaining coconut and almonds.
  9. Bake for 25–30 minutes, until the center is set with a slight jiggle.
  10. Cool completely, then refrigerate for at least 2–3 hours before slicing.
