Brownie Ingredients

  • 2 cups finely grated zucchini, firmly packed
  • 1 cup brown sugar
  • 1 1/3 cup unsweetened applesauce
  • 2 eggs
  • 2 teaspoons vanilla
  • 2/3 cup oat flour
  • 1 cup cocoa powder
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt

Optional Add-Ins

  • 1 cup chocolate chips and/or nuts

Optional Frosting

  • 1/2 cup chocolate chips
  • 1/2 cup butterscotch chips
  • 1/2 cup peanut butter
  • OR Nutella, for spreading

Instructions

  1. Finely grate the zucchini and firmly pack it to measure 2 cups.
  2. In a large mixing bowl, combine the grated zucchini, brown sugar, unsweetened applesauce, eggs, and vanilla. Mix until well combined.
  3. Add the oat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt. Stir until the dry ingredients are fully incorporated and a cohesive brownie batter forms.
  4. If using, fold in 1 cup of chocolate chips and/or nuts.
  5. Transfer the batter to the prepared baking pan and spread it into an even layer.
  6. Bake according to the original recipe’s specified baking temperature and time.
  7. Allow the brownies to cool before slicing.
  8. For the optional frosting, melt together the chocolate chips, butterscotch chips, and peanut butter, then spread over the cooled brownies. Alternatively, spread Nutella over the cooled brownies.

  • Chocolate chips and/or nuts are optional and can be left out for the base brownie.
