Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together the flour, baking powder, and salt.
- Melt the butter and chocolate chips until smooth, then stir in the cocoa powder and espresso powder.
- Beat the eggs, egg yolk, and sugar until thick and pale.
- Mix in the vegetable oil and vanilla extract.
- Stir the melted chocolate mixture into the egg mixture.
- Fold in the dry ingredients until just combined.
- Scoop the batter onto prepared baking sheets and top with extra chocolate chips.
- Bake for 9–11 minutes until the tops are crackled and the centers remain soft.
- Sprinkle with flaky sea salt immediately after baking if desired.
- Cool on the baking sheet for 10 minutes before transferring to a wire rack.
