Ingredients
- 2 cups cherries, washed, pitted, and halved
- Sprinkle of sugar
- 1⅓ cups white granulated sugar
- 2 large eggs
- 1 egg yolk
- 5 tablespoons unsalted butter, melted
- ⅓ cup canola or vegetable oil
- 1 teaspoon pure vanilla extract
- ¾ cup all-purpose flour
- ¾ cup Dutch-process cocoa powder
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 400°F (200°C).
- Arrange the cherries on a parchment-lined baking sheet, sprinkle with sugar, and roast for 15–20 minutes. Let cool.
- Reduce the oven temperature to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper.
- Whisk together the sugar, eggs, egg yolk, melted butter, oil, and vanilla until smooth.
- In another bowl, combine the flour, cocoa powder, cornstarch, and salt.
- Fold the dry ingredients into the wet ingredients until just combined.
- Stir in the chocolate chips and roasted cherries.
- Spread the batter evenly into the prepared pan.
- Bake for 32–38 minutes, or until a toothpick comes out with a few moist crumbs.
- Cool completely before slicing and serving.
