Description
Soft, buttery Red Velvet Cookies made with Dutch process cocoa, vanilla, red gel food coloring, and plenty of white chocolate for a rich, sweet finish.
Ingredients
Scale
- 1 1/2 cups + 2 tbsps (204 g) all-purpose flour, spooned and leveled
- 2 tbsps (10 g) Dutch process cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup (168 g) salted butter, softened
- 3/4 cup (165 g) light brown sugar
- 1/4 cup (50 g) granulated white sugar
- 2 egg yolks, at room temperature
- 1 tbsp vanilla
- 1–1 1/2 tsp red gel food coloring, depending on how red you want the cookies
- 3/4 cup (150 g) chopped white chocolate or white chocolate chips
Instructions
- Combine the all-purpose flour, Dutch process cocoa powder, baking soda, baking powder, and salt. Mix thoroughly and set aside.
- In a larger mixing bowl, beat the softened salted butter, light brown sugar, and granulated white sugar until creamy and well combined.
- Add the room-temperature egg yolks and vanilla. Mix until fully incorporated and smooth.
- Add 1 teaspoon of red gel food coloring and mix thoroughly. Add more, up to 1 1/2 teaspoons, if a brighter red color is desired.
- Add the dry ingredient mixture to the wet ingredients. Mix until a cohesive cookie dough forms, avoiding unnecessary overmixing.
- Fold in the chopped white chocolate or white chocolate chips until evenly distributed throughout the dough.
Notes
- Use softened, not melted, butter for the intended dough consistency.
- Adjust the red gel food coloring between 1 and 1 1/2 teaspoons according to the desired color.
- Use either chopped white chocolate or white chocolate chips, as specified in the recipe.
