Description

These Pumpkin Protein Muffins combine pumpkin puree, whole wheat pastry flour, protein powder, Greek yogurt, and warm pumpkin spices for soft, flavorful homemade muffins. Mini chocolate chips are optional for an extra touch of chocolate.

Ingredients

Scale
  • 1 ¼ cups whole wheat pastry flour
  • ½ cup protein powder, plain, vanilla, or chocolate
  • 2 tsp cinnamon
  • 1 ½ tsp baking soda
  • ½ tsp ground ginger
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • 15 oz canned pumpkin puree (not pumpkin pie filling)
  • ¾ cup coconut sugar or brown sugar
  • 2 large eggs
  • ¼ cup avocado oil
  • ¼ cup plain Greek yogurt
  • 2 tsp vanilla extract
  • ½ cup mini chocolate chips (optional) plus more for topping (optional)

Instructions

  1. Preheat the oven and prepare a muffin pan for baking.
  2. In a mixing bowl, whisk together the whole wheat pastry flour, protein powder, cinnamon, baking soda, ground ginger, ground nutmeg, and ground cloves until evenly combined.
  3. In a separate large bowl, combine the pumpkin puree, coconut sugar or brown sugar, eggs, avocado oil, Greek yogurt, and vanilla extract. Stir until smooth and well combined.
  4. Add the dry ingredients to the pumpkin mixture and stir gently until just combined. Do not overmix.
  5. If using, gently fold the mini chocolate chips into the batter.
  6. Divide the batter evenly among the prepared muffin cups.
  7. Sprinkle additional mini chocolate chips over the tops if desired.
  8. Bake until the muffins are set and cooked through.
  9. Allow the muffins to cool before serving.

Notes

  • Plain, vanilla, or chocolate protein powder can be used.
  • Mini chocolate chips are optional and can be added to the batter, used as a topping, or omitted completely.
