Description
These Pumpkin Pie Overnight Oats with Chia combine creamy Greek yogurt, pumpkin puree, maple syrup, rolled oats, chia seeds, and pumpkin pie spice for an easy make-ahead breakfast with cozy pumpkin pie flavor.
Ingredients
Scale
- ¼ cup (56g) plain nonfat Greek yogurt (or use vanilla!)
- ½ cup (120g) unsweetened vanilla almond milk (or any milk)
- ¼ cup (61g) pumpkin puree
- 1–2 tablespoons pure maple syrup
- ½ teaspoon vanilla extract
- ½ cup (48g) rolled oats (gluten free if desired)
- 2 teaspoons chia seeds
- ½ teaspoon pumpkin pie spice
Instructions
- Add the Greek yogurt, unsweetened vanilla almond milk, pumpkin puree, maple syrup, and vanilla extract to a bowl or container. Stir until smooth and evenly combined.
- Add the rolled oats, chia seeds, and pumpkin pie spice. Stir thoroughly to distribute the oats and chia seeds evenly throughout the mixture.
- Cover the container and refrigerate overnight, allowing the oats and chia seeds to absorb the liquid and soften. Stir before serving.
Notes
- Use 1 tablespoon of maple syrup for a less-sweet version or 2 tablespoons for more sweetness.
- Vanilla Greek yogurt can be substituted for plain nonfat Greek yogurt.
- Use certified gluten-free rolled oats if needed.
- Any milk can be used in place of the unsweetened vanilla almond milk.
