- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 medium carrot, diced
- 2–3 celery stalks, diced
- 2 large garlic cloves, finely chopped
- ¼ teaspoon red chili flakes
- ½ teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 can (14 oz / 400 g) chickpeas, drained and rinsed
- 1 can (14 oz / 400 g) cannellini beans, drained and rinsed
- ¾ cup (150 g) orzo
- 6 cups (1.5 liters) vegetable stock
- Juice of ½ lemon
- 2 cups (100 g) kale, roughly chopped
- Salt and freshly ground black pepper, to taste
Instructions
- Heat olive oil in a large soup pot over medium heat.
- Add onion, carrot, and celery, then cook for 7–8 minutes until softened.
- Stir in garlic, chili flakes, thyme, oregano, and basil, cooking for 1 minute.
- Add vegetable stock, chickpeas, and cannellini beans. Bring to a gentle boil.
- Stir in the orzo and simmer for 8–10 minutes until nearly tender.
- Add the chopped kale and cook for another 2–3 minutes.
- Remove from the heat and stir in the fresh lemon juice.
- Season with salt and black pepper to taste.
- Serve hot with crusty bread if desired.
Notes
- Cook the orzo just until al dente to prevent it from becoming overly soft.
- Add extra vegetable stock when reheating leftovers since the pasta absorbs liquid.
- Finish with fresh lemon juice right before serving for the brightest flavor.
