  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 23 celery stalks, diced
  • 2 large garlic cloves, finely chopped
  • ¼ teaspoon red chili flakes
  • ½ teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 can (14 oz / 400 g) chickpeas, drained and rinsed
  • 1 can (14 oz / 400 g) cannellini beans, drained and rinsed
  • ¾ cup (150 g) orzo
  • 6 cups (1.5 liters) vegetable stock
  • Juice of ½ lemon
  • 2 cups (100 g) kale, roughly chopped
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add onion, carrot, and celery, then cook for 7–8 minutes until softened.
  3. Stir in garlic, chili flakes, thyme, oregano, and basil, cooking for 1 minute.
  4. Add vegetable stock, chickpeas, and cannellini beans. Bring to a gentle boil.
  5. Stir in the orzo and simmer for 8–10 minutes until nearly tender.
  6. Add the chopped kale and cook for another 2–3 minutes.
  7. Remove from the heat and stir in the fresh lemon juice.
  8. Season with salt and black pepper to taste.
  9. Serve hot with crusty bread if desired.

Notes

  • Cook the orzo just until al dente to prevent it from becoming overly soft.
  • Add extra vegetable stock when reheating leftovers since the pasta absorbs liquid.
  • Finish with fresh lemon juice right before serving for the brightest flavor.
