For the White Chocolate Glaze

  •  1 cup white chocolate chips
  • ¼ cup + 3 tablespoons heavy cream
  • White food coloring (optional)
  • Oatmeal cream pie cookies, for decorating

Instructions

  1. Preheat the oven and prepare three 8-inch cake pans.
  2. Soak the quick oats in water for about 20 minutes.
  3. Whisk together the flour, cinnamon, nutmeg, salt, and baking soda.
  4. Cream the butter with both sugars until light and fluffy.
  5. Beat in the vanilla, eggs, and sour cream.
  6. Stir the soaked oats into the batter.
  7. Fold in the dry ingredients just until combined.
  8. Divide the batter evenly between the cake pans.
  9. Bake until a toothpick inserted into the center comes out clean.
  10. Cool the cakes completely on wire racks.
  11. Beat together the frosting ingredients until smooth and fluffy.
  12. Stack the cake layers with frosting between each layer.
  13. Frost the outside of the cake and chill for 20–30 minutes.
  14. Prepare the white chocolate glaze and let it cool slightly.
