- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, finely chopped
- 4 ripe tomatoes, chopped
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon smoked paprika (optional)
- ⅓ teaspoon turmeric
- 1 tablespoon tomato paste
- Salt and black pepper, to taste
- 1 can (15 oz / 425 g) white beans, drained and rinsed
- 1 cup vegetable broth
Instructions
- Heat the olive oil in a large pot over medium heat.
- Cook the onion until softened, then add the garlic.
- Stir in the tomatoes, tomato paste, cumin, paprika, smoked paprika, turmeric, salt, and pepper.
- Cook until the tomatoes break down into a rich sauce.
- Add the white beans and vegetable broth.
- Simmer for 15–20 minutes until the stew thickens.
- Taste and adjust the seasoning.
- Garnish with fresh parsley or cilantro and serve warm.
Notes
- Use ripe tomatoes for the richest flavor.
- Mash a few beans into the sauce for a thicker consistency.
- The stew tastes even better after resting overnight.
