Description
These easy Mixed Berry Crumble Bars combine juicy mixed berries with a buttery oat crumble flavored with brown sugar, cinnamon, and vanilla. Lemon juice adds a bright contrast to the sweet berry filling, while cornstarch helps create a thicker, jammy texture.
Ingredients
Scale
- 1 ½ cups quick oats
- 1 ½ cups flour
- 1 cup brown sugar, lightly packed
- 1 cup butter, melted
- ½ teaspoon cinnamon
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ½ teaspoon sea salt
- 2 ½ cups mixed berries, fresh or frozen, thawed if frozen
- Juice of 1/2 lemon
- 1 teaspoon cornstarch
- 3 tablespoons sugar, more if berries are super tart
Instructions
- Combine the quick oats, flour, lightly packed brown sugar, cinnamon, baking powder, and sea salt in a bowl.
- Add the melted butter and vanilla extract. Mix until the crumble mixture is evenly combined and moistened.
- Place the mixed berries in a separate bowl. Add the juice of half a lemon, cornstarch, and 3 tablespoons of sugar. Add more sugar if the berries are particularly tart, then gently mix.
- Prepare the baking pan and assemble the crumble mixture and berry filling evenly according to the recipe.
- Bake until the crumble is golden and the berry filling is soft, thickened, and bubbling.
- Remove from the oven and allow the bars to cool before cutting into individual squares.
Notes
- If using frozen berries, thaw them before preparing the filling.
- Taste the berries before adding the sugar and add more if they are particularly tart.
- Allow the bars to cool before slicing so the berry filling has time to settle and thicken.
