For the Cake
- 1¾ cups all-purpose flour

- ¾ cup hot water
For the Buttercream
- 1½ cups unsalted butter, softened
- 4 cups powdered sugar
- 1–2 tablespoons milk
- 1 teaspoon peppermint extract
- Green gel food coloring (optional)
- 4 ounces finely chopped dark or semisweet chocolate
Instructions
- Preheat oven to 350°F (175°C) and prepare two 8-inch cake pans.
- Whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix the sugar, oil, eggs, vanilla, peppermint extract, and buttermilk.
- Add the dry ingredients to the wet ingredients and mix until combined.
- Slowly stir in the hot water until the batter is smooth.
- Divide the batter evenly between the prepared pans.
- Bake for 30–35 minutes or until a toothpick comes out with a few moist crumbs.
- Cool the cakes completely on a wire rack.
- Beat the butter until fluffy, then gradually add powdered sugar, milk, peppermint extract, and food coloring.
- Fold in the chopped chocolate.
- Frost the cooled cake layers and decorate as desired.
- Chill for 20 minutes before slicing and serving.
