Ingredients

Scale

For the Cake

  • 1¾ cups all-purpose flour
  • ¾ cup Dutch-process cocoa powder
  • 1½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1¾ cups granulated sugar
  • ½ cup canola or vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ¼ teaspoon peppermint extract
  • ¾ cup buttermilk
  • ¾ cup hot water

For the Buttercream

  •  1½ cups unsalted butter, softened
  • 4 cups powdered sugar
  • 12 tablespoons milk
  • 1 teaspoon peppermint extract
  • Green gel food coloring (optional)
  • 4 ounces finely chopped dark or semisweet chocolate

Instructions

  1. Preheat oven to 350°F (175°C) and prepare two 8-inch cake pans.
  2. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the sugar, oil, eggs, vanilla, peppermint extract, and buttermilk.
  4. Add the dry ingredients to the wet ingredients and mix until combined.
  5. Slowly stir in the hot water until the batter is smooth.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 30–35 minutes or until a toothpick comes out with a few moist crumbs.
  8. Cool the cakes completely on a wire rack.
  9. Beat the butter until fluffy, then gradually add powdered sugar, milk, peppermint extract, and food coloring.
  10. Fold in the chopped chocolate.
  11. Frost the cooled cake layers and decorate as desired.
  12. Chill for 20 minutes before slicing and serving.

Notes

  • Use room-temperature ingredients for the smoothest batter and frosting.
  • Chill the cake briefly before slicing for cleaner, bakery-style pieces.
  • Finely chopped chocolate creates a smoother buttercream than regular chocolate chips.
