For the Sweet Potatoes

  • 4 sweet potatoes
  • 1 tablespoon olive oil or avocado oil

For the Black Bean Medley

  • 1 can (400 ml) black beans, drained and rinsed
  • 1 cup cherry tomatoes, chopped
  • ½ cup corn
  • ⅓ cup chopped cilantro
  • ¼ cup diced red onion
  • 1 garlic clove, minced
  • Juice of ½ lime
  • 2 teaspoons olive oil
  • ¼ teaspoon sea salt
  • Pinch of black pepper
  • Pinch of chili flakes

For the Guacamole

  • 1 avocado
  • 2 teaspoons lime juice
  • Pinch of sea salt

For the Vegan Sour Cream

 

  •  ⅓ cup coconut yogurt
  • ½ teaspoon lime juice
  • Pinch of sea salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork, rub with oil, and bake for 45–60 minutes until tender.
  3. Mix together the black beans, tomatoes, corn, cilantro, onion, garlic, lime juice, olive oil, salt, pepper, and chili flakes.
  4. Mash the avocado with lime juice and sea salt to make the guacamole.
  5. Stir together the coconut yogurt, lime juice, and sea salt for the vegan sour cream.
  6. Slice the baked sweet potatoes open and fluff the centers with a fork.
  7. Fill each potato with the black bean mixture.
  8. Top with guacamole and drizzle with vegan sour cream before serving.
