- 8 ounces tomato sauce
- 1 cup vegetable or chicken broth
- Finely chopped cilantro, for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Sauté the onion, bell pepper, and jalapeño for 4–5 minutes.
- Add the garlic and cook for 30 seconds.
- Stir in the rice and toast for 2–3 minutes.
- Add the cumin and salt.
- Pour in the tomato sauce and broth, then stir well.
- Bring to a gentle boil.
- Reduce the heat to low, cover, and simmer for 18–20 minutes.
- Remove from the heat and let the rice rest, covered, for 5–10 minutes.
- Fluff with a fork, garnish with cilantro if desired, and serve.

- Keep the lid closed while simmering to ensure perfectly cooked rice.
