Description
Menemen is a flavorful Turkish egg scramble made with tomatoes, green bell pepper, onion, butter, and Aleppo pepper. The eggs are gently cooked into the juicy tomato mixture for a soft, savory breakfast or brunch that’s easy to make in one skillet.
Ingredients
Scale
- 1 tablespoon olive oil
- 1 small white onion, finely diced
- 1 large green bell pepper, diced
- 1 (15-ounce) can diced tomatoes, with their juices
- 1 tablespoon butter
- 1 teaspoon Aleppo pepper
- Fine sea salt and freshly-cracked black pepper
- 3–4 eggs
- Optional garnishes: sliced chives or chopped parsley, crumbled feta, sliced avocado
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the finely diced onion and diced green bell pepper.
- Cook, stirring occasionally, until the onion and pepper begin to soften.
- Add the diced tomatoes with their juices. Stir to combine.
- Add the butter and Aleppo pepper, then season with fine sea salt and freshly-cracked black pepper.
- Cook until the tomato mixture is hot and the butter has melted into the vegetables and tomatoes.
- Add 3-4 eggs to the skillet and gently stir them into the tomato mixture.
- Continue cooking and stirring gently until the eggs are just set but still soft and moist. Avoid overcooking.
- Remove from the heat and adjust the seasoning if needed.
- Garnish with sliced chives or chopped parsley, crumbled feta, and/or sliced avocado if desired.
- Serve warm.
Notes
- Keep the juices with the canned tomatoes; they help create the moist tomato base.
- Use 3 eggs for a more vegetable-forward dish or 4 eggs for a heartier scramble.
- Cook the eggs gently and remove the skillet from the heat while they are still soft and moist.
