  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • ½ small red onion, diced
  • 3 cloves garlic, minced
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon dried thyme
  • ½ teaspoon ground black pepper
  • ½ teaspoon red pepper flakes
  • 1 cup chopped baby spinach
  • 4 large eggs
  • Optional: chopped fresh basil or fresh chives

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Add the tomatoes, bell pepper, onion, and garlic to a baking dish.
  3. Place the feta cheese in the center.
  4. Drizzle with olive oil and season with oregano, thyme, salt, pepper, and red pepper flakes.
  5. Bake for 25–30 minutes until the vegetables are tender and the tomatoes burst.
  6. Stir the melted feta into the vegetables until creamy.
  7. Fold in the chopped spinach until wilted.
  8. Create four wells and crack one egg into each.
  9. Return to the oven and bake for 7–10 minutes, until the eggs reach your desired doneness.
  10. Garnish with basil or chives and serve immediately.
