Description
Marry Me Chickpeas is a creamy, savory chickpea recipe made with garlic, sun-dried tomatoes, spinach, fresh basil, and vegan cream. It comes together in one skillet for a comforting meatless meal with plenty of tomato and herb flavor.
Ingredients
Scale
- 1 tablespoon olive oil
- 5 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 teaspoon oregano
- 1/2 teaspoon red chili flakes
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- (2) 15-ounce cans chickpeas, drained and rinsed
- 1 cup vegetable broth
- 1 tablespoon tomato paste
- 1 cup vegan cream
- 2 cups baby spinach, sliced
- 4–5 fresh basil leaves, chopped
- Optional: 1/2 cup grated vegan Parmesan cheese
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the minced garlic and chopped sun-dried tomatoes. Cook, stirring regularly, until the garlic is fragrant and the tomatoes have softened slightly.
- Add the oregano, red chili flakes, salt, and ground black pepper. Stir to combine the seasonings with the garlic and sun-dried tomatoes.
- Add the drained and rinsed chickpeas, vegetable broth, and tomato paste. Stir well until the tomato paste is incorporated into the broth and coats the chickpeas.
- Pour in the vegan cream and stir until fully combined with the chickpea mixture. Continue cooking until the sauce is hot and creamy.
- Add the sliced baby spinach and stir it into the sauce. Cook until the spinach has wilted and is evenly distributed throughout the chickpeas.
- Stir in the chopped fresh basil leaves.
- If using, add the grated vegan Parmesan cheese and stir it into the warm sauce. Serve warm.
Notes
- Use the vegan cream specified in your recipe notes; different vegan cream products can produce slightly different sauce consistencies.
- The vegan Parmesan is optional and can be omitted without changing the main recipe.
- Store leftovers in an airtight container in the refrigerator for 3–4 days. Reheat gently, stirring well, until heated through.
