Ingredients
- 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
- 1½ tsp kosher salt, divided
- 1 tsp dried oregano
- ¼ tsp freshly ground black pepper
- 2 Tbsp extra virgin olive oil
- 2 Tbsp unsalted butter
- 1 medium sweet onion, diced
- 2 celery stalks, finely chopped
- ½ cup sun-dried tomatoes, finely chopped
- 4 garlic cloves, finely chopped
- 2 Tbsp tomato paste
- 4 cups low-sodium chicken broth
- 2 Tbsp pesto
- 1 Parmesan rind (optional)
- 16 oz dried potato gnocchi
- ½–1 cup heavy cream
- 5 oz fresh baby spinach
- ½ cup grated Parmesan cheese
Instructions
- Season the chicken with 1 teaspoon salt, oregano, and black pepper.
- Brown the chicken in olive oil, then transfer it to a plate.
- Melt the butter and sauté the onion and celery until softened.
- Add the sun-dried tomatoes and garlic, then cook until fragrant.
- Stir in the tomato paste and cook for 1–2 minutes.
- Pour in the chicken broth, pesto, and Parmesan rind. Bring to a simmer.
- Return the chicken and simmer until fully cooked.
- Add the gnocchi and cook until tender.
- Stir in the heavy cream, spinach, and grated Parmesan.
- Remove the Parmesan rind, adjust seasoning, and serve hot.
Notes
- Freshly grated Parmesan melts much more smoothly than pre-shredded cheese.
- Stir in the cream over low heat to keep the broth silky and smooth.
- Add extra broth when reheating leftovers since the gnocchi will absorb liquid during storage.
