- ½ cup All purpose flour
- 1 ½ tsp Italian Seasoning
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- ½ tsp Paprika
- 2 tbsp Olive oil
- 2 tbsp Butter
Pasta Ingredients
- 10 oz Rigatoni, Uncooked
- 2 tbsp olive oil
- 2 cloves garlic, minced
- ½ cup sun-dried tomatoes, drained
- 2 tbsp tomato paste
- 1 cup chicken broth
- 1 cup heavy whipping cream
- 1 tsp Italian seasoning
- ½ tsp dried parsley
- ½ tsp Salt, more or less to taste
- Red Chili Flakes, to taste
- 1 cup Parmesan Cheese, grated, divided
Instructions
- Place the cubed chicken breast in a bowl. Season with salt, pepper, Italian seasoning, onion powder, garlic powder, and paprika. Add the all-purpose flour and toss until the chicken is evenly coated.
- Heat 2 tablespoons olive oil and 2 tablespoons butter in a large skillet over medium heat. Add the coated chicken and cook until the pieces are cooked through and golden, turning as needed for even browning. Set the cooked chicken aside.
- Cook the rigatoni according to the package directions until it reaches the desired texture. Drain the pasta.
- Heat 2 tablespoons olive oil in the skillet. Add the minced garlic and cook until fragrant.
- Add the drained sun-dried tomatoes and tomato paste. Stir to combine with the garlic.
- Pour in the chicken broth and heavy whipping cream. Add Italian seasoning, dried parsley, salt, and red chili flakes to taste. Stir until the sauce is well combined.
- Add the grated Parmesan, following the recipe’s divided amount, and stir until incorporated into the creamy sauce.
- Add the cooked rigatoni and chicken to the sauce. Gently toss until the pasta and chicken are evenly coated.
- Finish with the remaining Parmesan and serve warm.
Notes
- Adjust the red chili flakes to your preferred level of heat.
- Drain the sun-dried tomatoes before adding them to the sauce to avoid making the finished pasta overly oily.
- For the best texture, serve soon after combining the rigatoni with the creamy sauce and chicken.
