Ingredients

  • 2 large Korean or Persian cucumbers
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon chili flakes (or gochugaru)
  • 1 teaspoon sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • 2 green onions, finely chopped
  • 1 garlic clove, minced (optional)

Instructions

  1. Slice the cucumbers into thin rounds.
  2. Sprinkle with salt and let sit for 10–15 minutes.
  3. Drain and gently pat the cucumbers dry.
  4. Whisk together the rice vinegar, soy sauce, chili flakes, sugar, sesame oil, garlic, and sesame seeds.
  5. Add the cucumbers and green onions to a mixing bowl.
  6. Pour the dressing over the cucumbers and toss well.
  7. Let the salad marinate for 10–20 minutes.
  8. Garnish with extra sesame seeds and green onions before serving.
