For the Cobbler Topping

  •  2 1/2 cups all-purpose flour, spooned and leveled
  • 1 1/2 cups granulated sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1/2 cup buttermilk
  • 1 egg
  • 1/2 cup cold butter, chopped into chunks
  • 2 tablespoons granulated sugar, raw sugar, or a combination
  • Vanilla ice cream, for serving

Instructions

  1. Prepare the apples: Peel the apples, remove their cores, and cut them into evenly sized pieces. Place them in a large mixing bowl.
  2. Season the filling: Add the lemon zest, lemon juice, granulated sugar, brown sugar, flour, cinnamon, nutmeg, optional cardamom, kosher salt, and vanilla extract. Toss thoroughly until the apples are evenly coated.
  3. Prepare the dry topping ingredients: In a separate large bowl, combine the all-purpose flour, granulated sugar, kosher salt, and baking powder.
  4. Add the cold butter: Add the chopped cold butter and work it into the dry ingredients until the mixture is coarse and crumbly, with small pieces of butter still visible.
  5. Finish the topping: Add the buttermilk and egg. Mix just until the ingredients come together into a thick topping. Do not overmix.
  6. Assemble: Transfer the prepared apple mixture to a baking dish and spread it into an even layer. Spoon the cobbler topping over the apples, leaving a few small gaps where the fruit can remain visible.
  7. Add the sugar topping: Sprinkle the remaining 2 tablespoons of granulated or raw sugar over the cobbler topping.
