Description
These Healthy Pumpkin Oat Cookies are soft, chewy, and full of cozy pumpkin flavor. Made with oats, pumpkin puree, maple syrup, and optional pumpkin spice and dairy-free chocolate chips, they’re a simple homemade treat.
Ingredients
Scale
- 2.5 cups (250 g) rolled oats or quick oats
- 1 cup (240 g) pure pumpkin puree
- 3 tbsp maple syrup (agave syrup or coconut sugar)
- 2 tsp pumpkin pie spice or cinnamon (optional but recommended)
- 1/2 cup dairy-free chocolate chips (optional but recommended)
- Pinch of salt (optional but recommended)
Instructions
- Combine the Pumpkin and Sweetener: Add the pumpkin puree and maple syrup to a mixing bowl. Stir until smooth and evenly combined.
- Add the Oats and Seasoning: Add the rolled oats or quick oats, pumpkin pie spice or cinnamon, and salt if using. Stir until the oats are thoroughly coated and the mixture is thick and cohesive.
- Fold in the Chocolate Chips: Add the dairy-free chocolate chips if using. Stir gently until they are evenly distributed throughout the mixture.
- Portion the Cookies: Scoop portions of the mixture onto a prepared baking sheet, leaving space between them. Shape the portions into cookies as needed.
- Bake Until Set: Bake the cookies according to the recipe’s baking instructions until they are set and have the desired cookie texture. Allow them to cool before serving.
Notes
- Rolled oats create a more noticeable oat texture, while quick oats give a softer, more cohesive cookie.
- Use pure pumpkin puree rather than pumpkin pie filling.
- The chocolate chips, spice, and salt are optional, so they can be omitted according to preference.
