  • 1 cup Greek yogurt
  • 3 tablespoons mayonnaise
  • 1½ teaspoons chili powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • Zest and juice of 1½ limes

For the Salad

  • 6.7 ounces rotini pasta
  • 2½ cups corn
  • 2 teaspoons avocado oil
  • ¼ teaspoon chili powder
  • 2½ cups shredded cooked chicken
  • 1 cup crumbled cotija cheese
  • ½ cup chopped fresh cilantro

For Garnish

  •  Lime wedges

Instructions

  1. Cook the rotini in salted boiling water until al dente. Drain and rinse with cold water.
  2. Toss the corn with avocado oil and chili powder, then grill or sauté until lightly charred.
  3. Whisk together the Greek yogurt, mayonnaise, chili powder, garlic powder, salt, lime zest, and lime juice.
  4. Combine the cooled pasta, grilled corn, shredded chicken, cotija cheese, and cilantro in a large bowl.
  5. Pour the dressing over the salad and gently toss until evenly coated.
  6. Refrigerate for at least 30 minutes.
  7. Garnish with extra cotija, cilantro, and lime wedges before serving.
