Fruit Salsa with Cinnamon Sugar Chips

Fresh strawberry, peach, mango, and kiwi fruit salsa is lightly sweetened with honey and brightened with lemon and basil, then served with crisp homemade cinnamon sugar tortilla chips.

For the Fruit Salsa

  • 2 peaches, peeled and diced
  • 1 mango, peeled, cored and diced
  • 4 kiwis, peeled and diced
  • 16 oz strawberries, hulled and diced
  • 1 tablespoon fresh lemon juice (half a lemon)
  • 2 tablespoons honey
  • 2 tablespoons fresh basil, chopped

For the Cinnamon Sugar Chips

  •  1/3 cup granulated sugar
  • 1 teaspoon cinnamon
  • 10 flour tortillas, gluten-free, or grain-free
  • Coconut oil cooking spray or melted butter

Instructions

  1. Peel and dice the peaches and mango. Peel and dice the kiwis, then hull and dice the strawberries.
  2. Add all of the prepared fruit to a large mixing bowl.
  3. Add the fresh lemon juice, honey, and chopped basil. Gently fold the ingredients together until evenly combined.
  4. Cover and refrigerate the fruit salsa until ready to serve.
  5. Preheat the oven according to the temperature appropriate for baking the tortilla chips.
  6. In a small bowl, combine the granulated sugar and cinnamon.
  7. Cut the tortillas into small wedges or chip-sized pieces and arrange them in a single layer on a baking sheet.
  8. Lightly coat the tortilla pieces with coconut oil cooking spray or brush them with melted butter.
  9. Sprinkle the cinnamon sugar evenly over the tortilla pieces.
  10. Bake until the tortilla chips are crisp and lightly golden around the edges, watching closely toward the end of baking.
  11. Remove the chips from the oven and let them cool for a few minutes so they become crisp.
  12. Give the fruit salsa a gentle stir and serve with the cinnamon sugar chips.

  • For the best texture, gently fold the fruit together rather than stirring aggressively.
  • Store the fruit salsa and cinnamon sugar chips separately so the chips remain crisp.
