Sweetened Whipped Cream

 

  • ½ cup cold heavy cream
  • 1 tablespoon granulated sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Separate the egg yolks and egg whites into two bowls.
  2. Whisk the yolks with the milk, vanilla, and lemon zest.
  3. Sift in the flour and baking powder, then whisk until smooth.
  4. Add vinegar or lemon juice to the egg whites and beat until foamy.
  5. Gradually add the sugar while beating until stiff peaks form.
  6. Fold one-third of the meringue into the yolk mixture.
  7. Gently fold in the remaining meringue until just combined.
  8. Lightly oil a nonstick skillet and heat over low.
  9. Scoop tall mounds of batter into the skillet.
  10. Cover and cook for 4–5 minutes.
  11. Carefully flip, cover again, and cook another 4–5 minutes.
  12. Whip the heavy cream with sugar and vanilla until soft peaks form.
  13. Serve immediately with whipped cream, berries, powdered sugar, and maple syrup.
