Sweetened Whipped Cream
- ½ cup cold heavy cream
- 1 tablespoon granulated sugar
- ½ teaspoon vanilla extract
Instructions
- Separate the egg yolks and egg whites into two bowls.
- Whisk the yolks with the milk, vanilla, and lemon zest.
- Sift in the flour and baking powder, then whisk until smooth.
- Add vinegar or lemon juice to the egg whites and beat until foamy.
- Gradually add the sugar while beating until stiff peaks form.
- Fold one-third of the meringue into the yolk mixture.
- Gently fold in the remaining meringue until just combined.
- Lightly oil a nonstick skillet and heat over low.
- Scoop tall mounds of batter into the skillet.
- Cover and cook for 4–5 minutes.
- Carefully flip, cover again, and cook another 4–5 minutes.
- Whip the heavy cream with sugar and vanilla until soft peaks form.
- Serve immediately with whipped cream, berries, powdered sugar, and maple syrup.
