  • Author: Emmy Carter
  • Total Time: 50 minutes
  • Yield: 16 bars 1x

Description

Soft and chewy Fluffernutter Bars made with rich smooth peanut butter, brown sugar, and a sweet layer of marshmallow fluff. This easy peanut butter dessert is perfect for slicing into shareable bars.

Ingredients

Scale
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/3 cup white sugar
  • 1 1/2 cups smooth peanut butter
  • 1 large egg
  • 1 large egg yolk, in addition to the other egg, discard the white
  • 7 oz jar marshmallow fluff

Instructions

  1. Preheat the oven to the temperature specified by your baking setup and prepare a baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter, brown sugar, and white sugar until smooth and well combined.
  4. Add the smooth peanut butter and beat until incorporated. Add the whole egg and additional egg yolk, then mix until the mixture is smooth and evenly combined.
  5. Gradually add the dry ingredients to the peanut butter mixture. Mix just until the flour is incorporated. Do not overmix.
  6. Transfer the thick batter to the prepared pan and spread it evenly into the corners with a spatula.
  7. Spoon the marshmallow fluff over the peanut butter batter and gently spread it into an even layer.
  8. Bake in the preheated oven until the bars are baked through and set, checking toward the end of the expected baking time.
  9. Remove from the oven and allow the bars to cool completely in the pan.
  10. Once cooled, lift the bars from the pan using the parchment overhang and cut into squares or rectangles with a sharp knife.

Notes

  • Use softened, not melted, butter for the intended tender texture.
  • Smooth peanut butter gives the bars their creamy peanut butter consistency.
  • Cool the bars completely before slicing for cleaner portions and a more settled marshmallow layer.
