Description
Easy Chicken au Poivre features tender chicken thighs served with a creamy black pepper sauce made with shallots, thyme, brandy or cognac, chicken broth, and heavy cream.
Ingredients
Scale
- 8 boneless and skinless chicken thighs, trim excess fat and pat dry with paper towels
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- ¼ cup (0.75 oz) minced shallots
- 1½ tablespoons whole black peppercorns
- 3 thyme sprigs
- ¼ cup brandy or cognac
- 1½ cups low-sodium chicken broth
- ¾ cup heavy cream
- 1 tablespoon chopped parsley leaves
- Salt and black pepper, to taste
Instructions
- Trim any excess fat from the chicken thighs and pat them dry with paper towels.
- Heat the olive oil and unsalted butter in a large skillet. Add the chicken thighs and cook until browned and cooked through. Transfer the chicken to a plate and set aside.
- Add the minced shallots, whole black peppercorns, and thyme sprigs to the skillet. Cook until the shallots soften and the mixture becomes fragrant.
- Pour in the brandy or cognac and stir, incorporating the flavorful browned bits from the bottom of the skillet.
- Add the low-sodium chicken broth and heavy cream. Stir well and cook until the sauce becomes creamy and thick enough to coat the chicken.
- Return the cooked chicken thighs to the skillet and spoon the sauce over them. Allow the chicken and sauce to come together briefly.
- Remove the thyme sprigs if desired. Stir in the chopped parsley and season with salt and black pepper to taste.
- Serve the chicken warm with the creamy pepper sauce spooned over the top.
Notes
- Pat the chicken thighs dry before cooking to encourage better browning.
- Whole black peppercorns provide the signature peppery flavor and texture of the sauce.
- Reheat leftovers gently over low to medium-low heat to help maintain the creamy texture of the sauce.
