Salad
- 1 cup dried quinoa
- 1¾ cups water
- 1 teaspoon garlic powder
- 1 large red bell pepper, diced
- 1 cucumber, diced
- 1 cup carrots, diced
- ¼ red cabbage, shredded
- 2–3 scallions, thinly sliced
- ½ cup chopped cilantro
- Handful of peanuts or cashews (optional)
Dressing
- 4 tablespoons nut butter
- 2 tablespoons maple syrup
- 1 teaspoon tamari or soy sauce
- 1-inch piece fresh ginger, grated
- Juice of 1–2 limes
- Salt, to taste
Instructions
- Rinse the quinoa thoroughly.
- Cook the quinoa with the water and garlic powder until tender.
- Let the quinoa cool completely.
- Chop all of the vegetables and herbs.
- Whisk together all dressing ingredients until smooth.
- Combine the quinoa and vegetables in a large bowl.
- Pour the dressing over the salad and toss well.
- Sprinkle with peanuts or cashews before serving.
- Chill for 20–30 minutes if desired, then serve.
Notes
- Allow the quinoa to cool before assembling the salad to keep the vegetables crisp.
- Fresh lime juice provides the brightest flavor and balances the creamy dressing.
- Add the nuts just before serving to maintain their crunchy texture.
