- 4 pounds large Russet potatoes, about 4–6 potatoes
- 1 pound boneless, skinless chicken breast, about 2–3 breasts
- 1 tablespoon ranch seasoning mix
- 4 ounces block cream cheese, softened
- 3 slices cooked bacon, diced or crumbled
- 1 cup freshly grated sharp cheddar cheese
- Extra bacon, chopped, for topping, optional
- Chives, for topping, optional
- Ranch dressing, for drizzling, optional
- Blue cheese crumbles, for topping, optional
Instructions
- Preheat the oven to 400°F (200°C). Scrub the potatoes, dry them thoroughly, and pierce each several times with a fork.
- Place the potatoes on a baking sheet and bake for 50–65 minutes, or until fork-tender.
- Meanwhile, cook the chicken until it reaches an internal temperature of 165°F (74°C). Rest briefly, then shred.
- Add the shredded chicken, softened cream cheese, ranch seasoning, cooked bacon, and ¾ cup of the cheddar to a large bowl. Mix until creamy and evenly combined.
- Carefully cut each baked potato lengthwise. Fluff the potato centers with a fork while keeping the skins intact.
- Divide the crack chicken mixture evenly between the potatoes.
- Sprinkle the remaining cheddar over the tops.
- Return the potatoes to the oven and bake for 8–12 minutes, until the cheese is melted and bubbling.
- For a golden topping, broil for 1–2 minutes, watching closely.
- Finish with optional bacon, chives, ranch dressing, or blue cheese crumbles and serve hot.
Notes
- Use freshly grated cheddar for the smoothest, creamiest melt.
- Let the cream cheese soften before mixing it with the chicken.
- Don’t overbake the potatoes after filling them; once the cheese is melted and bubbling, they’re ready to serve.
