  • 1 pound boneless, skinless chicken breast, about 23 breasts
  • 1 tablespoon ranch seasoning mix
  • 4 ounces block cream cheese, softened
  • 3 slices cooked bacon, diced or crumbled
  • 1 cup freshly grated sharp cheddar cheese
  • Extra bacon, chopped, for topping, optional

  • Ranch dressing, for drizzling, optional
  • Blue cheese crumbles, for topping, optional

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub the potatoes, dry them thoroughly, and pierce each several times with a fork.
  2. Place the potatoes on a baking sheet and bake for 50–65 minutes, or until fork-tender.
  3. Meanwhile, cook the chicken until it reaches an internal temperature of 165°F (74°C). Rest briefly, then shred.
  4. Add the shredded chicken, softened cream cheese, ranch seasoning, cooked bacon, and ¾ cup of the cheddar to a large bowl. Mix until creamy and evenly combined.
  5. Carefully cut each baked potato lengthwise. Fluff the potato centers with a fork while keeping the skins intact.
  6. Divide the crack chicken mixture evenly between the potatoes.
  7. Sprinkle the remaining cheddar over the tops.
  8. Return the potatoes to the oven and bake for 8–12 minutes, until the cheese is melted and bubbling.
  9. For a golden topping, broil for 1–2 minutes, watching closely.
  10. Finish with optional bacon, chives, ranch dressing, or blue cheese crumbles and serve hot.
