Cowboy Queso Dip

  • Author: Emmy Carter
  • Total Time: 35 minutes
  • Yield: 12 servings 1x

Description

This Cowboy Queso Dip combines savory ground pork sausage, crispy bacon, Rotel tomatoes with green chilies, black beans, corn, and two kinds of cheese for a creamy, hearty appetizer. Serve it warm with tortilla chips and your favorite toppings.

Ingredients

Scale
  • 1 lb ground pork sausage (spicy or mild)
  • 6 slices bacon, cooked and crumbled
  • 1 can (10 oz) Rotel tomatoes with green chilies (undrained)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen or canned corn (drained if using canned)
  • 16 oz Velveeta cheese, cubed
  • 1 cup shredded pepper jack cheese (or Monterey Jack)
  • ½ cup beer (or substitute chicken broth or milk)
  • 1 tablespoon taco seasoning
  • Fresh cilantro, chopped (for garnish)
  • Optional toppings: diced jalapeños, green onions, hot sauce

Instructions

  1. Place the ground pork sausage in a large skillet or heavy-bottomed pot over medium heat. Cook, breaking it apart with a wooden spoon or spatula, until fully cooked and nicely browned.
  2. Add the cooked and crumbled bacon, undrained Rotel tomatoes with green chilies, drained and rinsed black beans, and drained corn. Stir everything together until evenly combined.
  3. Add the cubed Velveeta and shredded pepper jack cheese. Pour in the ½ cup of beer, or use chicken broth or milk as a substitute. Stir gently as the cheeses melt, cooking over medium to medium-low heat until smooth and creamy.
  4. Add 1 tablespoon of taco seasoning and stir thoroughly until evenly distributed. Continue stirring until all the ingredients are well combined and the queso reaches a thick, creamy consistency that is easy to scoop.
  5. Garnish with freshly chopped cilantro. Add diced jalapeños, green onions, or hot sauce if desired. Serve warm with tortilla chips.

Notes

  • Use spicy or mild ground pork sausage depending on your preferred level of heat.
  • Pepper jack can be replaced with Monterey Jack for a milder cheese flavor.
  • If using canned corn, drain it before adding it. Keep the Rotel tomatoes undrained.
  • Refrigerated leftovers will thicken; reheat gently and stir frequently to restore the creamy texture.
