Ingredients

Scale

For the Cookies

  • 1 cup unsalted butter, room temperature
  • 1 ¼ cups granulated sugar
  • 1/4 cup dark brown sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 Tbsp whole milk
  • 2 tsp vanilla extract
  • 2 ¾ cups all-purpose flour, spooned and leveled
  • 1 ½ tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp cornstarch
  • 3/4 tsp salt
  • 1/2 tsp baking soda

For the Streusel

  • 1/2 cup + 2 Tbsp all-purpose flour
  • 1/4 cup light brown sugar, packed
  • 2 Tbsp granulated sugar
  • 1 tsp ground cinnamon
  • 1/8 tsp salt
  • 1/4 cup unsalted butter, melted and cooled slightly
  • Splash of vanilla

For the Glaze

  •  1 cup powdered sugar, plus more as needed
  • 2 Tbsp milk or heavy cream
  • Pinch salt
  • 1/2 tsp vanilla or clear vanilla

Instructions

  1. Prepare the Cookie Dough: Place the room-temperature unsalted butter, granulated sugar, and dark brown sugar in a mixing bowl. Beat until creamy and well combined. Add the egg, egg yolk, whole milk, and vanilla extract, then mix until smooth.
  2. Combine the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, cornstarch, salt, and baking soda.
  3. Finish the Cookie Dough: Gradually add the dry ingredients to the wet mixture, mixing until a cohesive cookie dough forms. Stop mixing once the flour is incorporated.
  4. Make the Streusel: Combine the flour, light brown sugar, granulated sugar, cinnamon, and salt. Add the melted, slightly cooled butter and a splash of vanilla. Mix until a crumbly streusel forms.
  5. Prepare the Cookies for Baking: Portion the cookie dough onto a prepared baking sheet, leaving space between the portions. Generously add the prepared streusel over each cookie.
  6. Bake the Cookies: Bake the prepared cookies according to the original recipe’s baking instructions.
  7. Prepare the Vanilla Glaze: Combine the powdered sugar, milk or heavy cream, salt, and vanilla in a small bowl. Stir until smooth, adding more powdered sugar as needed to reach the desired consistency.
  8. Finish the Cookies: Allow the baked cookies to cool enough for glazing, then drizzle the vanilla glaze over the cookies and streusel. Let the glaze set before serving.

Notes

  • Use room-temperature butter and eggs for the cookie dough.
  • Allow the melted butter for the streusel to cool slightly before combining it with the dry ingredients.
  • Add more powdered sugar to the glaze as needed to create a thicker consistency.
