Ingredients

Scale

For the Chicken

  • 1 1/2 lbs diced chicken breast
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano or dried herbs

For the Sauce

  • 1/2 onion, minced
  • 3 cloves of garlic
  • 1 teaspoon fresh grated ginger, or more if you like it extra gingery (1 tablespoon was used in the original recipe)
  • 1/4 cup chicken broth
  • 1 1/4 cups canned light coconut milk, from 1 can
  • 1 tbsp tomato paste
  • 1/2 teaspoon kosher salt

For the Bowls

  •  Fresh cilantro
  • 3 cups cooked jasmine rice or basmati
  • More coconut milk, optional for topping

Instructions

  1. Dice the chicken breast into evenly sized pieces and season with kosher salt, smoked paprika, and dried oregano or dried herbs.
  2. Prepare the sauce ingredients by mincing the onion and garlic and grating the fresh ginger.
  3. Cook the seasoned diced chicken according to the original recipe’s cooking method until cooked through.
  4. Prepare the coconut sauce using the minced onion, garlic, fresh ginger, chicken broth, light coconut milk, tomato paste, and remaining kosher salt.
  5. Combine the cooked chicken with the coconut sauce and coat the chicken well.
  6. Divide the cooked jasmine or basmati rice between serving bowls.
  7. Spoon the coconut chicken and sauce over the rice.
  8. Finish with fresh cilantro and add more coconut milk on top if desired.

Notes

  • For a stronger ginger flavor, increase the fresh ginger from 1 teaspoon to 1 tablespoon as noted in the original ingredient list.
  • Jasmine rice or basmati rice can be used according to your preference.
  • Additional coconut milk is optional and can be added when serving for extra coconut flavor.
