Crust
- 2¼ cups vanilla wafer crumbs (about 60 vanilla wafers)
- ¼ cup brown sugar
- ½ cup unsalted butter, melted
Filling
- 1 cup mascarpone cheese
- ½ cup confectioners’ sugar
- 1½ teaspoons vanilla extract
- ¼ teaspoon ground cinnamon
- 2–3 teaspoons lemon zest
- 1 cup whole milk ricotta cheese
- ¾ cup heavy whipping cream
- 1⅓ cups mini chocolate chips, divided
Instructions
- Mix the vanilla wafer crumbs, brown sugar, and melted butter.
- Press into a 9-inch pie plate and refrigerate.
- Beat mascarpone, confectioners’ sugar, vanilla, cinnamon, lemon zest, and ricotta until smooth.
- Whip the heavy cream to stiff peaks.
- Fold the whipped cream into the cheese mixture.
- Fold in 1 cup of the mini chocolate chips.
- Spread the filling into the chilled crust.
- Smooth the top evenly.
- Refrigerate for at least 6 hours or overnight.
- Sprinkle the remaining chocolate chips over the pie before serving.
Notes
- Drain ricotta if it contains excess moisture.
- Chill overnight for the best flavor and clean slices.
- Garnish with whipped cream, pistachios, or extra chocolate chips before serving.
