Ingredients
Scale
- 3 Tbsp. unsalted butter
- 1 small yellow onion, diced small
- 1 cup sliced baby carrots, or 2 large carrots, peeled and diced
- 4 celery stalks, diced
- 1 tsp. garlic powder
- 2 tsp. fresh thyme, or 1 tsp. dried
- 2 tsp. fresh rosemary, minced, or 1 tsp. dried
- 1 tsp. chicken bouillon seasoning
- 1/2 tsp. salt, plus more to taste
- 1/2 tsp. paprika
- 1/2 tsp. adobo seasoning
- 1/2 tsp. black pepper
- 1/4 cup all-purpose flour
- 1½ cups uncooked orzo
- 3 cups chicken broth, plus more as needed
- 1 cup heavy cream or half & half
- 2 cups cooked chicken, shredded or chopped; rotisserie works great
- 1/2–1 cup frozen peas, or a mix of peas, corn, and green beans
- Fresh parsley, chopped, for garnish
- Parmesan, optional
Instructions
- Melt the unsalted butter in a large skillet or deep pan over medium heat. Add the diced onion, sliced baby carrots, and diced celery. Cook, stirring occasionally, until the vegetables begin to soften and the onion is tender.
- Stir in the garlic powder, thyme, rosemary, chicken bouillon seasoning, salt, paprika, adobo seasoning, and black pepper. Mix well so the seasonings coat the vegetables.
- Sprinkle the all-purpose flour over the vegetables and stir thoroughly until the flour is incorporated into the butter and vegetables.
- Add the uncooked orzo, chicken broth, and heavy cream or half & half. Stir well to combine and distribute the orzo throughout the liquid.
- Continue cooking and stirring until the orzo becomes tender and the mixture turns creamy. Add more chicken broth as needed if the orzo requires additional liquid while cooking.
- Stir in the cooked shredded or chopped chicken and frozen peas. If using the vegetable mixture, add the peas, corn, and green beans instead. Continue cooking until the chicken is heated through and the vegetables are warm.
- Taste and add more salt if needed. Garnish with chopped fresh parsley and optional Parmesan before serving.
Notes
- Rotisserie chicken is a convenient choice, but any cooked shredded or chopped chicken can be used.
- Orzo absorbs liquid as it cooks, so add additional chicken broth as needed to maintain a creamy consistency.
- Heavy cream makes the dish richer, while half & half provides a lighter creamy texture. Taste before adding extra salt because the chicken bouillon, broth, and adobo seasoning can already contain salt.
