Description

This creamy Chicken Gnocchi Soup combines tender chicken, potato gnocchi, carrots, celery, onion, and savory herbs in a rich, comforting broth. It is a hearty homemade soup that’s perfect for an easy dinner.

Ingredients

Scale
  • 3 tablespoons unsalted butter (42.4 grams)
  • 3 celery stalks, trimmed and diced
  • 2 medium carrots, peeled and diced
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/3 cup all-purpose flour (40 grams)
  • 4 cups chicken broth (907 grams)
  • 2 cups half and half (454 grams)
  • 1 pound boneless skinless chicken breasts (453.6 grams)
  • 16 ounces potato gnocchi (453.6 grams)

Instructions

  1. Melt the unsalted butter in a large soup pot over medium heat.
  2. Add the diced celery, carrots, and yellow onion. Cook, stirring occasionally, until the vegetables begin to soften.
  3. Add the minced garlic, dried thyme, dried oregano, kosher salt, and black pepper. Stir to combine.
  4. Sprinkle the all-purpose flour over the vegetables and stir thoroughly until the flour is incorporated into the butter and vegetables.
  5. Gradually pour in the chicken broth while stirring continuously. Add the half and half and stir until the mixture is smooth and well combined.
  6. Add the boneless skinless chicken breasts to the soup. Cook until the chicken is tender and fully cooked through.
  7. Remove the cooked chicken from the pot and cut it into bite-sized pieces.
  8. Return the chicken to the soup and add the potato gnocchi.
  9. Cook until the gnocchi is tender, stirring gently.
  10. Serve the Chicken Gnocchi Soup warm.

Notes

  • Stir the flour thoroughly into the butter and vegetables before adding the liquids to help create a smooth broth.
  • Add the gnocchi toward the end of cooking and cook only until tender to help maintain its texture.
  • Store leftovers in an airtight container in the refrigerator and reheat gently, as the gnocchi can become softer after sitting in the soup.
