- 1½ pounds boneless, skinless chicken breast, pounded to ¼-inch thickness
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- ¼ teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 8 ounces mushrooms, sliced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
Instructions
- Season the chicken with salt, garlic powder, onion powder, paprika, and black pepper.
- Heat olive oil in a skillet and sear the chicken until golden and cooked through. Remove and keep warm.
- Sauté the mushrooms until browned and tender.
- Stir in the butter and melt completely.
- Sprinkle in the flour and cook for 1 minute.
- Slowly whisk in the chicken broth until smooth.
- Simmer until the gravy thickens.
- Return the chicken to the skillet and coat with the mushroom gravy.
- Simmer for 2–3 minutes and serve hot.

- Pound the chicken evenly for quick, uniform cooking.
- Brown the mushrooms well for the best flavor.
- Add a splash of heavy cream for an extra-rich gravy.
