Description
These Chewy Snickerdoodles are soft and tender in the center with a lightly baked exterior and a classic cinnamon-sugar coating. Cream of tartar gives these homemade cookies their signature tangy flavor.
Ingredients
Scale
- 2 ¾ cups (358g) all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ cup (168g) unsalted butter, room temperature
- 1 ½ cups (310g) sugar, plus 3 tablespoons for rolling
- 2 large eggs
- 1 ½ teaspoons vanilla extract
- 1 tablespoon ground cinnamon
Instructions
- Add the all-purpose flour, cream of tartar, baking soda, and salt to a bowl. Whisk or stir until evenly combined.
- In a separate large mixing bowl, beat the room-temperature butter with the 1 ½ cups of sugar until well combined and creamy.
- Beat the two large eggs into the butter and sugar mixture until incorporated. Add the vanilla extract and mix until smooth and evenly combined.
- Gradually add the dry ingredients to the butter mixture. Mix until the ingredients come together into a cohesive cookie dough, avoiding unnecessary overmixing.
- In a small bowl, combine the remaining 3 tablespoons of sugar with the tablespoon of ground cinnamon.
- Portion the cookie dough and roll each portion into a ball. Roll each dough ball in the cinnamon-sugar mixture until evenly coated. Arrange the coated dough portions on prepared baking sheets, leaving enough space for spreading.
- Bake until the cookies have a baked exterior while remaining soft in the center.
- Allow the cookies to cool briefly on the baking sheet before transferring them to a wire rack.
Notes
- Use the provided 358g flour measurement for the most consistent dough.
- The butter should be softened to room temperature but not melted.
- Let the cookies cool after baking so the centers can finish setting while remaining chewy.
