Cheesecake Layer

  •  8 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 1 large egg, room temperature
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Melt the chocolate chips and butter until smooth, then cool slightly.
  3. Stir in the sugar and vanilla extract.
  4. Add the eggs one at a time, whisking well after each addition.
  5. Fold in the cocoa powder, cornstarch, and salt.
  6. Stir in the mini chocolate chips and reserve about ½ cup of batter.
  7. Spread the remaining brownie batter into the prepared pan.
  8. Beat the cream cheese until smooth, then mix in the sugar.
  9. Add the egg and vanilla extract until fully combined.
  10. Spread the cheesecake mixture over the brownie layer.
  11. Spoon the reserved brownie batter over the cheesecake and swirl gently with a knife.
  12. Bake for 35–40 minutes until the edges are set and the center is slightly jiggly.
  13. Cool completely, refrigerate for at least 2 hours, then slice and serve.
