Caprese Dip

  • Author: Emmy Carter
  • Total Time: 40 minutes
  • Yield: 8 servings 1x

Description

This warm Caprese Dip combines roasted cherry tomatoes, basil pesto, fresh basil, garlic, sour cream, and three melty cheeses for a creamy, savory appetizer that’s perfect with crusty bread, crackers, or tortilla chips.

Ingredients

Scale
  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons basil pesto, homemade or store-bought
  • 5 cloves garlic, minced
  • Kosher salt and black pepper, to taste
  • 1 cup sour cream
  • 1/2 cup fresh chopped basil
  • 8 ounces low-moisture mozzarella cheese, cut into chunks
  • 8 ounces shredded provolone cheese
  • 1/4 cup freshly grated Parmesan cheese
  • Crusty bread, crackers, or tortilla chips, for serving

Instructions

  1. Preheat the oven to 375°F.
  2. Place the cherry tomatoes in a baking dish. Add the olive oil, basil pesto, minced garlic, kosher salt, and black pepper. Toss until the tomatoes are evenly coated.
  3. Spread the tomatoes into an even layer and roast for 15–20 minutes, until softened and slightly blistered but still holding some of their shape.
  4. While the tomatoes roast, combine the sour cream and chopped fresh basil in a bowl.
  5. Add the mozzarella chunks, shredded provolone, and Parmesan cheese. Stir gently until combined.
  6. Remove the roasted tomatoes from the oven and gently stir them, scraping up the flavorful juices, garlic, and pesto from the bottom of the dish.
  7. Add the sour cream and cheese mixture to the roasted tomatoes. Gently fold everything together without crushing the tomatoes too much.
  8. Return the dish to the oven and bake until the cheese is fully melted and the dip is hot and bubbling around the edges.
  9. If desired, briefly broil the top for additional browning, watching carefully to prevent burning.
  10. Let the dip rest for a few minutes, then serve warm with crusty bread, crackers, or tortilla chips.

Notes

  • Use low-moisture mozzarella rather than fresh mozzarella to help prevent excess moisture in the finished dip.
  • Store-bought or homemade basil pesto can be used. Since pesto and the cheeses can already be salty, season gradually.
  • Serve the dip warm for the best melted, stretchy cheese texture. Refrigerated leftovers can be gently reheated in a 350°F oven.
