Blueberry Pie Overnight Oats

  • Author: Emmy Carter
  • Total Time: 20 minutes
  • Yield: 1 servings 1x

Description

Blueberry Pie Overnight Oats combine creamy vanilla coconut yogurt, rolled oats, fresh blueberries, chia seeds, and a bright homemade blueberry chia compote, finished with a crunchy walnut or granola crumble.

Ingredients

Scale

For the Overnight Oats

  • 1/2 cup + 2 tbsp (GF) old-fashioned rolled oats (large flakes)
  • 1/2 cup of your favorite nut milk. (I used vanilla, unsweetened almond milk)
  • 5 tbsp of vanilla coconut yogurt
  • 1/4 tsp pure vanilla extract
  • 1 tbsp pure maple syrup OR rice malt syrup OR date nectar OR raw honey
  • 1/2 cup fresh organic blueberries
  • 1 tbsp chia seeds
  • 1 handful of crumbled walnuts or granola (as the crumble topping)

For the Blueberry Chia Compote/Jam

  •  2 cups of fresh blueberries
  • 1 heaping tsp of lemon zest
  • 2.5 tbsp of fresh lemon juice
  • 2 tbsp pure maple syrup
  • 2.5 tbsp of chia seeds
  • 1/2 tsp vanilla extract

Instructions

  1. Add the blueberries, lemon zest, lemon juice, maple syrup, chia seeds, and vanilla extract for the compote to a saucepan.
  2. Cook, stirring as needed, until the blueberries soften and the mixture becomes thick and jammy. Remove from the heat and allow the compote to cool.
  3. In a bowl, combine the rolled oats, nut milk, vanilla coconut yogurt, vanilla extract, chosen sweetener, and chia seeds. Stir thoroughly until evenly combined.
  4. Gently stir the fresh blueberries into the oat mixture.
  5. Transfer the oat mixture to a serving container and add the cooled blueberry chia compote as part of the assembly.
  6. Cover and refrigerate overnight, or until the oats have softened and thickened.
  7. Top with a handful of crumbled walnuts or granola just before serving.

Notes

  • The blueberry chia compote makes about 1 cup, so you will have leftovers to use on toast or another breakfast.
  • If you prefer not to make the compote, use organic wild blueberry jam, preferably a no-sugar-added variety.
  • Add the walnut or granola crumble just before serving to help keep its texture crunchy.
