- 1/3 cup dried blueberries
- 1/2 cup cashews
- 1/4 cup chopped green onions
- 1 tablespoon lemon zest
- 1 cup lemon poppyseed dressing
Instructions
- Wash and thoroughly dry the broccoli before chopping it into bite-sized florets.
- Rinse and dry the fresh blueberries.
- Chop the green onions and zest the lemon.
- Add the broccoli, blueberries, dried blueberries, green onions, lemon zest, and cashews to a large mixing bowl.
- Pour the lemon poppyseed dressing over the salad.
- Toss gently until everything is evenly coated.
- Refrigerate for 20–30 minutes before serving.
- Toss once more and garnish with extra blueberries, cashews, or lemon zest if desired.
Notes
- Toast the cashews for deeper flavor and extra crunch.
- Add the nuts just before serving if making the salad ahead.
- Chill the salad for at least 20 minutes to allow the flavors to blend beautifully.
