Description
Creamy goat cheese and cream cheese are topped with sweet-tangy blueberries cooked with balsamic vinegar, honey, rosemary, and salt, then served over crusty French bread.
Ingredients
Scale
- 1 cup blueberries, fresh or frozen
- 2 teaspoons honey, plus 1 teaspoon more if blueberries aren’t very sweet
- 2 teaspoons balsamic vinegar
- 1/4 teaspoon salt
- 1/4 scant teaspoon crushed rosemary
- 4 ounces goat cheese
- 2 ounces cream cheese
- 1 loaf crusty French bread
Instructions
- Add the blueberries, honey, balsamic vinegar, salt, and crushed rosemary to a small saucepan.
- Cook over medium-low heat, stirring occasionally, until the blueberries soften, release their juices, and the mixture becomes juicy and slightly thickened. Add the extra teaspoon of honey if the blueberries are not very sweet. Remove from the heat and cool.
- Place the softened goat cheese and cream cheese in a small bowl. Mix until thoroughly combined and creamy.
- Slice the crusty French bread into individual pieces. Serve fresh or lightly toast the slices until crisp and lightly golden.
- Spread the goat cheese mixture over each bread slice.
- Spoon the cooled blueberry balsamic mixture over the cheese.
- Arrange the assembled pieces on a serving platter and serve shortly after assembling.
Notes
- Fresh or frozen blueberries can be used. Frozen berries may release more liquid and can require slightly longer cooking.
- Taste the blueberries before adding the optional extra teaspoon of honey so the topping does not become unnecessarily sweet.
- For the best texture, prepare the blueberry topping and cheese spread ahead, but assemble the bread shortly before serving.
