- 3 cups quick oats
- 1 cup white chocolate chips
- 1 cup fresh blackberries, cut into halves or quarters
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Beat the butter, brown sugar, and white sugar until light and fluffy.
- Mix in the eggs one at a time, then add the vanilla extract.
- Whisk together the flour, cornstarch, baking soda, and salt.
- Gradually combine the dry ingredients with the wet mixture.
- Stir in the quick oats.
- Toss the blackberry pieces with the extra flour.
- Fold in the white chocolate chips and coated blackberries gently.
- Scoop the dough onto prepared baking sheets.
- Bake for 11–14 minutes until the edges are lightly golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Pat the blackberries dry before adding them to the dough for the best texture.
- Slightly underbake the cookies for a perfectly soft and chewy center.
- Chill the dough for 20–30 minutes if it becomes too soft before baking.
